Zootopia (film)

This donut post was supposed to be done on Friday, and I apologize, but I was out watching the world’s #1 movie. Again.
That’s right, I’m talking about Zootopia. Have you seen it yet?
Its only the greatest Disney movie ever. Judy Hopps (voiced by the amazing Ginny Goodwin) is the first bunny recruit to make on the Zootopia Police force. A feisty little thing determined to prove herself, she partners with a small time con artist, a sly fox named Nick Wild (Jason Bateman). Together they set out to solve the city’s biggest mystery.
It offers a fantastic look at social prejudices and political power. Plus, Judy’s fierce determination to not let anyone tell her what she can or can’t be, is inspiring. Its full of heart and humor.
And donuts.
Lot’s of Donuts. Not only do we see Judy save a little mole from a Run-a-way Donut sign, and then capture the bad guy with the same big donut, but there’s Benjamin Clawhauser, the Police department’s Front Desk Officer. He’s a big fan of donuts. Huge fan. In fact, the only thing he loves more than Donuts is Pop star Gazelle. (She’s an angel with horns).
And since The Big Donut is the theme here, I’m not only going to make a BIG donut, I’m going to show you how 1 recipe can make 5 variations.
Its not just THE BIG DONUT post, its THE big donut post. Get it?
The Big Donut Post
Makes 2 big donuts and 6 regular donuts, or 1 big donut and 10 regular donuts
Ingredients:
4 tablespoons butter, softened
1/4 cup vegetable oil
1/2 cup granulated sugar
1/3 cup brown sugar
2 large eggs
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 to 1 teaspoon ground nutmeg
3/4 teaspoon salt
1 teaspoon vanilla extract
2 2/3 cups All-Purpose Flour
1 cup milk
Directions:
- Preheat the oven to 425°F. Lightly grease a 6 inch cake pan and a small metal ramekin. Place the ramekin in the center of the pan. Lightly grease 2 standard doughnut pans.
- In a medium-sized mixing bowl, beat together the butter, vegetable oil, and sugars until smooth.
- Add the eggs, beating to combine.
- Stir in the baking powder, baking soda, nutmeg, salt, and vanilla.
- Stir the flour into the butter mixture alternately with the milk, beginning and ending with the flour and making sure everything is thoroughly combined.
The batter should be pretty thick.
- Fill a decorator bag with donut batter
- Fill cake pan, and donut pans, about 3/4 full
- Bake the doughnuts for 10-15 minutes, or until edges are golden and a tooth pick inserted in the center comes out clean. Remove them from the oven, and wait 5 minutes before turning them out of the pans onto a rack
To Make The Big Donut Chocolate Glazed Donuts:
- In a microwave safe bowl melt 1/2 cup chocolate chips, 2 tbsp butter, 1 tbsp corn syrup at 20 second increments
- stir in vanilla
- Dip top of donut into glaze and cover with sprinkles. Using pink-tinted butter cream, pipe ‘The Big Donut’.(Optional)
To Make Cinnamon Sugar Donuts:
- Melt 1 tsp of butter in a small microwave safe bowl.
- Fill a ziplock back with 1/4 granulated sugar and 2 tbsp cinnamon
- Brush the donuts with melted butter and place in the ziplock back. Seal bag and toss to coat
To Make Powdered Sugar Donuts:
- Place 1/4 cup powdered sugar in a ziplock bag
- Add warm donuts, 1 at a time, to the bag, seal and toss to coat.
To Make Strawberry Glazed Donuts:
- In a shallow bowl mix 1 tbsp strawberry jam, 1/4 cup powdered sugar, 1/2 tsp corn syrup and 1/2 tsp milk
- Dip top of donuts into the icing and allow to set on a cooling rack
To Make Vanilla Sprinkle Donuts:
- Combine 1 1/4 cups powdered sugar, 1 tbsp light corn syrup, 1 tbsp melted butter, 1 tbsp milk, 1/2 teaspoon vanilla extract, 2 drops pink food color optional
- Dip tops of donuts in icing and cover with sprinkles.
- Enjoy.
